Although he’s French-born and English-raised, something kept calling Edd to Latin America. At first, he just wanted to surf. He worked his way through Nicaragua, Peru, and Ecuador in hospitality, hotels, and restaurants—plus a stint at a banana plantation in Australia and in the Michelin kitchen at Trattoria Toscana in Castiglione Della Pescaia, Tuscany. Over a decade after his first visit to Central America, he’s made his home where it all began: on the beach in Nicaragua.
